Just in time to start your New Year Resolutions off right! You’ll have a big ol jar-on thanks to this month’s Novem Beef Cake, Amanda Jo! Each week she does her food prep ritual to ensure  healthy food’s on hand when the week gets hectic. For a vegetarian crossfitter, like Amanda Jo, quinoa is a higher protein option to other  breakfast grains. In the salad jars anything goes. The tofu could be easily replaced with eggs or chicken. Taking the time to do this prep on Sunday evenings gives her the benefit of having a convenient and healthy breakfast and lunch ready for each day of the week ahead!

Quinoa Breakfast Parfait:

Add 1 cup quinoa to 2 cup almond milk & tbs vanilla extract. Bring to a boil on high, then turn to low to allow the pot to simmer for  15-25 minutes.

Allow the quinoa to cool to room temperature.

Equally distribute quinoa into mason jars or tupperware containers.

Top quinoa with seasonal fruit and nuts. Pictured with blueberries and almonds.

Suggested additions to quinoa breakfast parfait:

Dried fruits

Nuts

Any fresh seasonal fruits

Cinnamon & nutmeg

Coconut flakes

Sweeten to taste with honey, agave nectar,  mashed banana, or pureed dates

 

Jar O’ Salad:

 

This is key: Stack heaviest/liquid on bottom with lighter items on top!

 

Pictured salad:

Balsamic vinegar on the bottom.

Next chopped carrot, cucumber, broccoli, yellow pepper.

Next tofu cubes.

Next romaine lettuce.

Topped with some kale.

Get creative with those salad mixings!
